Cape Curry (or Cape Malay*) Sauce is the spice-soul of the Cape in a base of sweet vegetables: carrots and sweet potatoes - with ginger, coriander, turmeric, cumin, chilli, cayenne, black pepper, paprika, fennel, cinnamon and clove.

It takes a lot of time (and ingredients!) to make a Cape Curry sauce... and then it always tastes better the next day (spiced sauces need time to grow into being their best!).

Cape Curry is delicious as a table sauce on grilled chicken or lamb and on butternut, sweet potatoes (fried with a little ginger), baked onion and potato, and egg dishes with rice (like Biryani) or egg salad with a bit of mayonnaise. It is also stunning on white fish.

Cape Curry Sauce is mild - made for family meals; for families who like things hotter, serve a fresh, chopped chilli (and lime) sambal on the side. The base of Cape Malay is so well made, there is room for lots more heat!

Make Sweet Potatoes (the orange type) with chickpeas

Lightly fry a chopped onion in a little oil. Add approx 400g sweet potato, a slug of Cape Curry and cook on a low heat until the sweet potato is done. Add a bit more sauce and a can of drained chickpeas. Serve on baby spinach with a sprinkling of pumpkin seeds in Summer; in Winter, serve it hot on brown and wild rice with onion sprinkles.

Make a stunning Biryani in the time it takes to boil the rice...

Add some Cape Curry sauce to a small pan, add your shredded, precooked chicken (some people like to add some coarsely chopped, fried onion and a handful of sultanas), heat it through and pour it over your rice and veg and peeled boiled eggs; garnish with slivered almonds and shredded coriander and enjoy!
