Sauce - "Moderately Hot" HARISSA - Ukuva iAfrica

Use in a tagine with lamb, aubergine and tomatoes - also delicious in a butternut puree served with glazed parsnip and a drizzle of argan oil.
Works exceptionally well with chicken: paint Harissa (mixed with a little olive oil and a chopped fresh chilli if more heat is desired) onto the chicken before cooking. Serve some sauce on the side, with salted lemon and toasted, flaked almonds.
Vegetarian/Vegan Party Piece - Thinly slice scrubbed sweet potatoes, paint with olive oil, arrange in a ring on a baking plate, season and roast (Approx 25 min at 180 C).
In a large pan, saute petal-cut red onion, baby marrow, aubergine and mixed bell peppers. Add 100ml of Harissa Sauce to an equal volume of canned, chopped, peeled tomato, pour over the vegetables; heat through and pile into the ring. Garnish with grated Parmesan (serve grated Parmesan on the side if there are vegans at the table) and a sprinkling of pine nuts (or slivered almonds).
